This Tahini Kofta recipe combines tender ground beef spiced with allspice and cinnamon, layered over roasted potato rounds and topped with a rich, creamy tahini sauce. Baked to perfection, the dish features a flavorful blend of Middle Eastern spices with a luscious tahini glaze, making it a hearty and satisfying meal.

Ingredients

Kofta Mixture

  • 500g ground beef (15-20% fat)
  • 1 small yellow onion, grated and squeezed dry
  • 0.5 cup fresh parsley, finely minced
  • 1 tsp allspice
  • 0.5 tsp cinnamon
  • 1 tsp salt
  • 0.5 tsp black pepper

Tahini Sauce

  • 0.5 cup tahini paste
  • 0.25 cup fresh lemon juice
  • 2 cloves garlic, crushed
  • 1 pinch cumin
  • 0.5 cup warm water

Potatoes and Additional Ingredients

  • 3 large russet potatoes, peeled and sliced into 1cm rounds
  • 1 tbsp extra virgin olive oil
  • Pinch of salt (for potatoes)

Instructions

  1. Preheat and Prepare Potatoes: Preheat your oven to 200°C (400°F). Toss the potato rounds in 1 tablespoon of olive oil and a pinch of salt. Spread them evenly across a large rimmed baking dish to roast for 15 minutes, allowing them to soften.
  2. Mix Kofta Ingredients: In a mixing bowl, combine the ground beef, grated onion, minced parsley, allspice, cinnamon, salt, and black pepper. Mix thoroughly until the meat mixture becomes slightly tacky, indicating it is well combined and ready to shape.
  3. Prepare Tahini Sauce: Whisk together the tahini paste, fresh lemon juice, crushed garlic, and cumin in a bowl. Gradually add the warm water while whisking continuously until you achieve a smooth and heavy cream-like consistency.
  4. Assemble the Dish: Remove the potatoes from the oven. Arrange the beef mixture on top of the par-roasted potatoes, shaping them as small oval patties or flat rounds. Pour the tahini sauce evenly over the beef and potatoes.
  5. Bake Until Done: Return the baking dish to the oven and bake for an additional 10-15 minutes until the kofta is cooked through and the tahini sauce thickens into a golden brown glaze, creating a flavorful finish.

Notes

  • Ensure the onion is well squeezed to avoid excess moisture in the kofta mixture.
  • You can adjust the amount of lemon juice in the tahini sauce to taste for a tangier or milder flavor.
  • Use a meat thermometer to check that the beef reaches an internal temperature of 71°C (160°F) for safe consumption.
  • Russet potatoes work best for roasting due to their starchy texture, which crisps nicely.
  • For a spicier kick, consider adding a pinch of chili flakes to the kofta meat mixture.
