Shrimp Scampi Flatbread combines succulent shrimp sautéed in a garlic lemon butter sauce with toasted flatbread, topped with Parmesan cheese and fresh parsley for a quick and flavorful meal or appetizer.

Ingredients

Shrimp Scampi

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup dry white wine (or chicken broth)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup melted butter
  • Salt and pepper, to taste

Flatbread and Topping

  • 2 flatbreads (store-bought or homemade)
  • 1/2 cup grated Parmesan cheese
  • Fresh lemon wedges for garnish

Instructions

  1. Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 3 minutes per side until pink and opaque. Remove shrimp from the pan and set aside.
  2. Sauté the Garlic: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant, careful not to burn it.
  3. Add Lemon and Wine: Pour in white wine (or chicken broth) and fresh lemon juice. Scrape up any bits stuck to the pan and let the mixture simmer for 2 minutes to reduce slightly.
  4. Finish the Sauce: Stir in melted butter and red pepper flakes if using. Cook until butter is melted and sauce is smooth. Season with salt and pepper to taste.
  5. Add the Shrimp Back In: Return shrimp to the skillet and toss to coat in the sauce. Remove from heat and sprinkle lemon zest and chopped parsley on top.
  6. Toast the Flatbreads: Preheat oven to 400°F. Place flatbreads on a baking sheet and toast for 5 minutes until lightly crispy.
  7. Brush with Butter: Remove flatbreads from oven and brush each with melted butter for richness.
  8. Top with Shrimp Scampi: Evenly distribute shrimp scampi over flatbreads, spreading sauce and shrimp evenly.
  9. Add Parmesan: Sprinkle grated Parmesan cheese over the top, then return to oven for 5 minutes to melt cheese and heat through.
  10. Garnish and Serve: Remove from oven, garnish with additional parsley, and serve immediately with lemon wedges on the side for extra brightness.

  • Use dry white wine for authentic flavor, but chicken broth is a good non-alcoholic substitute.
