Ingredients

Main Components

  • 450 g breakfast sausage
  • 6 large eggs
  • 120 ml whole milk
  • 60 g shredded cheddar cheese
  • 4 large flour tortillas

Seasoning

  • 1/2 teaspoon fine salt
  • 1/4 teaspoon ground black pepper

For Cooking

  • Butter or oil, for greasing pan

Instructions

  1. Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage, breaking it into small crumbles. Stir occasionally and cook until evenly browned and thoroughly cooked through. Transfer the cooked sausage to a plate and set aside.
  2. Prepare egg mixture: In a mixing bowl, whisk together the eggs, whole milk, fine salt, and ground black pepper until the mixture is homogenous. Set aside.
  3. Cook scrambled eggs: Return the skillet to medium-low heat and add a small amount of butter or oil. Pour in the egg mixture and cook gently, stirring occasionally, until the eggs are just softly scrambled. Remove the eggs from the skillet and set aside.
  4. Assemble roll-ups: Lay out the flour tortillas on a clean workspace. Evenly distribute the cooked sausage and scrambled eggs over each tortilla. Sprinkle shredded cheddar cheese on top of the filling.
  5. Roll tortillas: Tightly roll up each tortilla to enclose the filling, making sure to position the seam side down to keep them sealed.
  6. Toast roll-ups: Heat a bit more butter or oil in the skillet over medium heat. Place each roll-up seam side down and toast for 2 to 3 minutes, turning to brown all sides evenly and ensuring the cheese melts throughout the roll-ups.

Notes

  • Use medium or mild sausage if you prefer less spice.
  • Cheddar can be substituted with other cheeses like Monterey Jack or mozzarella for different flavors.
  • To make ahead, assemble roll-ups and refrigerate; toast them just before serving.
  • Use low-fat milk or egg whites for a lighter version.
  • Serve with salsa, hot sauce, or fresh herbs for extra flavor.
