A hearty and savory Sausage Crescent Roll Breakfast Casserole that combines flavorful pork sausage, cream cheese, colorful peppers and onions, cheddar cheese, and a creamy egg mixture baked atop a buttery crescent roll crust. Perfect for a comforting breakfast or brunch gathering.

Ingredients

Base and Filling

  • Cooking spray for coating baking pan
  • 1 package (227 g) refrigerated crescent roll dough
  • 450 g bulk pork sausage
  • 60 g chopped red bell pepper
  • 30 g chopped yellow onion
  • 30 g chopped green onions
  • 120 g cream cheese
  • 1 teaspoon ground black pepper
  • 200 g shredded Cheddar cheese
  • 6 large eggs
  • 180 ml low-fat milk

Instructions

  1. Preheat and prepare pan: Preheat the oven to 175°C (350°F). Lightly coat a 23x33 cm (9x13 inch) baking dish with cooking spray to prevent sticking.
  2. Form crescent roll base: Press refrigerated crescent roll dough evenly into the bottom of the prepared baking dish, making sure to seal any perforations so the dough forms a continuous crust. Set aside.
  3. Cook sausage and vegetables: Heat a large skillet over medium-high heat. Add the bulk pork sausage, chopped red bell pepper, chopped yellow onion, and chopped green onions. Sauté for 5 to 7 minutes, stirring frequently, until the sausage is browned and crumbly and the vegetables have softened.
  4. Drain and add cream cheese: Drain off any excess oil from the skillet. Add the cream cheese and ground black pepper to the sausage-vegetable mixture. Cook while stirring for 2 to 3 minutes until the cream cheese is fully melted and the mixture is creamy. Remove from heat and allow to cool slightly.
  5. Assemble casserole layers: Spread the sausage and cream cheese mixture evenly over the crescent roll dough base in the baking dish. Then sprinkle the shredded Cheddar cheese uniformly on top of the sausage layer.
  6. Prepare egg mixture: In a bowl, whisk together the 6 large eggs and 180 ml low-fat milk until fully combined and smooth.
  7. Pour egg mixture and bake: Pour the egg and milk mixture evenly over the layered ingredients in the baking dish. Place the casserole in the preheated oven and bake for approximately 30 minutes, or until the crescent roll crust is golden on the bottom, the cheese is melted, and the eggs are fully set in the center.

Notes

  • Ensure the crescent roll dough perforations are sealed well to prevent leakage during baking.
  • You can substitute bulk pork sausage with turkey sausage for a leaner option.
  • Add extra vegetables like mushrooms or spinach for additional nutrients.
  • Let the casserole rest for 5 minutes after baking for easier serving.
  • Serve with fresh fruit or a simple side salad for a balanced meal.
