Ingredients

Strawberry Simple Syrup

  • 1 cup sliced fresh strawberries
  • ½ cup water
  • ½ cup organic cane sugar

Mango Puree

  • 8 oz mango chunks (about 1 ripe mango, peeled and cubed)
  • 1 cup water
  • ½ lemon, freshly squeezed

Mocktail

  • ½ cup mango puree, divided
  • ½ cup cooled strawberry simple syrup
  • 4 oz whiskey alternative
  • Crushed ice or ice cubes
  • Club soda, for topping (preferably lemon-lime flavor)
  • Fresh rosemary or thyme sprigs, for garnish
  • Sliced fresh strawberries, for garnish

Instructions

  1. Make the Strawberry Simple Syrup: In a saucepan over medium-high heat, combine sliced strawberries, water, and sugar. Stir to combine and bring to a boil, about 2 minutes. Reduce heat to low and simmer for an additional 3 minutes. Remove from heat and set aside to cool completely.
  2. Prepare the Mango Puree: In a high-powered blender, combine mango chunks, water, and freshly squeezed lemon juice. Blend on high speed for 2-3 minutes until smooth and creamy.
  3. Mix the Mocktail: In a cocktail shaker, combine the cooled strawberry simple syrup and whiskey alternative. Shake well until combined. If preferred, whisk together in a bowl. If not using the whiskey alternative, simply mix the juices and syrup together.
  4. Assemble the Drink: Fill glasses with crushed ice or ice cubes. Add the mango puree evenly to each glass, followed by the mocktail mixture until the glass is about three-quarters full. Top off with club soda to taste.
  5. Garnish and Serve: Add fresh rosemary or thyme sprigs and sliced fresh strawberries to each glass for a beautiful and aromatic garnish. Serve immediately and enjoy your refreshing mocktail!
