A flavorful Hot Honey Chicken Sandwich featuring crispy baked chicken breasts coated in panko breadcrumbs and drizzled with spicy-sweet hot honey, complemented by a tangy lemon mayo spread on soft burger buns. Perfect for a delicious dinner or satisfying lunch.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste

Sauce and Assembly

  • ½ cup hot honey
  • ¼ cup mayonnaise
  • 2 tbsp fresh lemon juice
  • 4 burger buns

Instructions

  1. Preheat and Season: Preheat your oven to 425°F (220°C). Pat the chicken breasts dry and season both sides generously with salt and pepper.
  2. Prepare Dredging Stations: Set up three shallow bowls—one with all-purpose flour, the second with beaten eggs, and the third with panko breadcrumbs.
  3. Coat Chicken: Dredge each chicken breast first in the flour, shaking off excess, then dip into the beaten eggs, and finally press firmly into the panko breadcrumbs to cover evenly.
  4. Bake Chicken: Place the breaded chicken breasts on a baking sheet lined with parchment paper or a silicone mat. Bake in the preheated oven for 25 minutes or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
  5. Prepare Sauce: While the chicken is baking, combine mayonnaise and fresh lemon juice in a small bowl. Stir well and adjust seasoning with a pinch of salt or pepper if desired.
  6. Assemble Sandwich: Spread the lemon mayo mixture on the bottom halves of the burger buns. Place the baked chicken breasts on top, then drizzle each generously with hot honey. Add any preferred toppings such as lettuce, pickles, or onions, then cover with the bun tops.
  7. Serve: Serve the hot honey chicken sandwiches immediately while warm for the best flavor and texture.

Notes

  • For extra crispiness, use a wire rack on the baking sheet to allow air circulation around the chicken.
  • Adjust the amount of hot honey according to your preferred spice level.
  • To make it gluten free, substitute all-purpose flour and panko crumbs with gluten-free alternatives.
  • Let the baked chicken rest a few minutes before assembling to retain juices.
  • You can add sliced pickles, lettuce, or tomato for additional crunch and freshness.
