Ingredients

Shrimp Marinade & Cooking

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Zest and juice of 1 lime
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

Base & Toppings

  • 2 cups cooked white or jasmine rice
  • 2 ripe avocados, diced
  • 1 tablespoon lime juice (for avocado)

Cilantro Garlic Sauce

  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • 1 clove garlic
  • 1 tablespoon lemon or lime juice
  • 1 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Marinate Shrimp: In a bowl, whisk together olive oil, honey, lime zest, lime juice, minced garlic, salt, and pepper. Add the peeled and deveined shrimp and toss to coat evenly. Let the shrimp marinate for 10–15 minutes to absorb the flavors.
  2. Cook Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2–3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the heat and set aside.
  3. Prepare Avocado: In a small bowl, gently toss the diced avocados with lime juice and a pinch of salt to enhance their flavor and prevent browning.
  4. Make Cilantro Garlic Sauce: In a blender or food processor, combine Greek yogurt, chopped cilantro, garlic clove, lemon or lime juice, olive oil, and salt. Blend until the sauce is smooth and creamy.
  5. Assemble the Stack: On serving plates or using a mold, layer cooked rice first, then add a layer of the seasoned avocado, and top with the cooked shrimp.
  6. Serve: Drizzle generously with the cilantro garlic sauce over the assembled rice stack and serve immediately for best flavor and texture.
