Ingredients

Potato Base

  • 2 large potatoes, peeled and cubed
  • 1 teaspoon garlic granules
  • 1 teaspoon onion granules
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons cornstarch, more as needed

Finishing & Serving

  • Cooking oil spray
  • 3.5 ounces (100 grams) unsalted butter
  • 2 teaspoons garlic granules
  • Fresh parsley, a small handful, finely chopped

Instructions

  1. Boil Potatoes: Peel and cut potatoes into cubes, then place them into boiling water. Cook until fork-tender, approximately 12 to 15 minutes. Drain thoroughly to remove excess water.
  2. Mash Potatoes & Season: Transfer the drained potatoes to a mixing bowl. Add garlic granules, onion granules, paprika, salt, and freshly ground black pepper. Mash the potatoes until completely smooth, ensuring the spices are evenly incorporated.
  3. Form Potato Dough: Gradually mix in the cornstarch to the mashed potatoes until a thick and cohesive dough forms. Add extra cornstarch if needed to achieve firmness suitable for shaping.
  4. Shape Potato Pops: Roll the potato mixture into balls approximately 1 inch in diameter. Arrange the potato balls in a single layer inside the basket of an air fryer. Lightly spray them with cooking oil for crisping.
  5. Air Fry: Set the air fryer to 400°F (200°C) and cook the potato pops for 15 to 20 minutes. Shake the basket regularly for even browning, until the pops are golden brown and crispy on all sides.
  6. Prepare Garlic Butter: While the potato pops cook, combine unsalted butter, garlic granules, and chopped fresh parsley in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the butter is fully melted and fragrant.
  7. Coat & Serve: Transfer the hot potato pops to a serving bowl. Drizzle them generously with the melted garlic butter and gently toss to ensure all are evenly coated. Serve immediately, garnishing with any remaining garlic butter and extra parsley if desired.

Notes

  • For best results, ensure the potatoes are mashed very smooth before adding cornstarch to create a uniform dough.
  • If the dough feels too soft to roll, add cornstarch a teaspoon at a time until it firms up.
  • You can prepare the garlic butter ahead and warm it just before serving.
  • These bites are best enjoyed fresh but can be reheated in the air fryer briefly to restore crispness.
  • If an air fryer isn’t available, oven baking at 425°F (220°C) for 20-25 minutes can be an alternative, turning midway.
  • Use fresh parsley for a bright, fresh flavor boost; dried herbs can be used but reduce quantity.
