Instructions

  1. Prepare the eggs: In a bowl, combine the whisked eggs, kosher salt, and white pepper. Whisk everything together until well mixed.
  2. Melt butter in skillet: Place a large skillet on medium heat and add 2 tablespoons of butter. Allow it to melt completely.
  3. Butter the bread: Use the remaining 1 tablespoon of butter to spread on one side of each bread slice and set them aside, buttered side up.
  4. Cook eggs and arrange bread: Pour the egg mixture into the warm skillet and tilt the pan to spread the eggs evenly. Immediately place both bread slices, butter side up, with their unbuttered sides touching, directly onto the eggs.
  5. Set the eggs: Let the eggs cook undisturbed for 5 to 7 minutes until they are fully set and no longer liquidy.
  6. Flip the sandwich components: Carefully flip the bread and eggs so the bread is now down on the skillet and the eggs are on top. Flip only when the eggs are fully set to keep the sandwich intact.
  7. Add cheese and ham: Place the cheddar slice on one piece of bread, then stack the deli ham on top. Fold any extra cooked egg over the ham side.
