These Deliciously Easy French Dip Tortilla Roll Ups combine tender roast beef and melted cheese wrapped in soft flour tortillas, baked to golden perfection, and served with a savory au jus dipping sauce. Ready in just 30 minutes, they make a perfect appetizer or snack for any occasion.

Ingredients

For the Roll Ups

  • 12 oz roast beef deli-style or leftover roast
  • 8 oz mozzarella or provolone shredded
  • 4 pcs flour tortillas soft yet sturdy
  • 2 tablespoon melted butter for brushing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried parsley for garnish

For the Au Jus

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • to taste salt & pepper for seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Assemble Roll Ups: Lay your flour tortillas flat on a clean surface and evenly distribute slices of roast beef and shredded mozzarella or provolone down the center of each tortilla.
  3. Roll Tortillas: Roll the tortillas tightly from one end, folding in the sides as you go to secure the filling and prevent it from spilling out during baking.
  4. Brush and Season: Brush the top of each roll up with melted butter, then sprinkle evenly with garlic powder, onion powder, and dried parsley for flavor and a nice golden color.
  5. Bake Roll Ups: Place the prepared roll ups on the lined baking sheet and bake for 15 minutes until the tortillas are golden brown and the cheese inside is melted and bubbly.
  6. Prepare Au Jus: While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, salt, and pepper in a saucepan. Simmer gently for 7 minutes to meld the flavors into a savory dipping sauce.
  7. Slice and Serve: Remove roll ups from the oven and slice them into bite-sized pieces. Serve warm alongside the flavorful au jus for dipping.

Notes

  • Use sturdy flour tortillas to prevent sogginess during baking.
  • Leftover roast beef works perfectly and adds extra flavor.
  • Feel free to substitute provolone with mozzarella or any preferred melting cheese.
  • Adjust seasoning in the au jus to your taste, adding more garlic powder or soy sauce if desired.
  • For a crispier texture, broil the roll ups for 1-2 minutes at the end of baking but watch carefully to avoid burning.
