Ingredients
Dough Ingredients
500 g plain (all-purpose) flour
250 g strong white bread flour
100 g caster (superfine) sugar
10 g fine sea salt
7 g fast-action dried yeast
300 ml whole milk, warmed
2 large eggs
100 g unsalted butter, room temperature
Coffee Custard
200 ml coffee custard
Topping Ingredients
100 g lightly spiced crumb topping
50 g grated chocolate
Instructions
Prepare Dry Ingredients: In a large mixing bowl, combine the plain flour, strong white bread flour, caster sugar, fine sea salt, and fast-action dried yeast. Stir to mix thoroughly.
Add Wet Ingredients and Form Dough: Warm the whole milk and add it along with the eggs and room temperature unsalted butter to the dry ingredients. Stir until a cohesive dough forms.
Knead the Dough: Turn the dough onto a lightly floured surface and knead for about 10 minutes until the dough is smooth and elastic.
Shape and Proof: Shape the dough into individual buns, place on a baking tray, and press shallow wells in the center of each bun. Cover and let them proof in a warm place until doubled in size, approximately 2 hours.
Prepare for Baking: Preheat your oven to 375°F (190°C). Brush the edges of each bun with an egg wash to promote browning.
Fill and Top: Fill the wells of the proofed buns with coffee custard, then sprinkle the lightly spiced crumb topping around the custard.
Bake the Buns: Bake in the preheated oven for 25 minutes or until the buns are golden brown and cooked through.
Finish and Serve: Let the buns cool slightly on a rack. Once warm, grate chocolate over the top of each bun before serving for an extra touch of indulgence.
Notes
Whole wheat flour can be used instead of plain flour for a denser bun.
Granulated sugar can replace caster sugar but may affect texture slightly.
Non-dairy milk like almond or oat milk can be used as a substitute for whole milk.
Aquafaba or flax egg can substitute eggs for a vegan-friendly option.
Plant-based butter can replace unsalted butter for a dairy-free alternative.
Adjust proofing time depending on room temperature; warmer environments shorten proofing.
Lightly spiced crumb topping can be substituted with a nut-based crumb for extra flavor and texture.
Ensure the buns have cooled slightly before grating chocolate to prevent melting too quickly.
