Ingredients

Feta Rolls

  • 200 g feta cheese, cut into small rectangular sticks
  • 6 sheets phyllo pastry
  • 3 tbsp unsalted butter, melted
  • 1 tsp sesame seeds (optional)

Hot Chili Lemon Honey

  • ¼ cup honey
  • 1 small red chili, finely chopped (or ½ tsp chili flakes)
  • Zest of 1 lemon
  • 1 tbsp fresh lemon juice
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat and prepare baking tray: Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper for easy cleanup and to prevent sticking.
  2. Prepare phyllo strips: Lay one sheet of phyllo pastry on a clean, dry surface and brush it fully with melted butter. Place a second sheet on top and brush it with butter as well. Cut the stacked sheets into strips about 6–8 cm wide to form the bases for the rolls.
  3. Assemble rolls: Place a stick of feta cheese at one end of each phyllo strip. Fold the sides over to cover the cheese and roll the phyllo tightly around the feta, forming a cylinder shape to ensure the filling is securely wrapped.
  4. Brush and add seeds: Brush the outside of each rolled phyllo cylinder with more melted butter for a golden finish. If desired, sprinkle sesame seeds on top to add a subtle nutty flavor and texture.
  5. Bake rolls: Arrange the rolls on the prepared baking tray spaced slightly apart. Bake in the preheated oven for 15–20 minutes or until they turn a beautiful golden brown and become crispy.
  6. Prepare hot chili lemon honey: While the rolls bake, gently warm the honey in a small saucepan over low heat. Stir in the finely chopped red chili (or chili flakes), lemon zest, and lemon juice. Warm for 1–2 minutes to infuse flavors, then remove from heat to keep warm.
  7. Finish and garnish: As soon as the rolls come out of the oven, drizzle the warm chili lemon honey generously over them. Garnish with freshly chopped parsley if using to add a touch of color and freshness.
  8. Serve: Serve the crispy baked feta rolls immediately while warm and crispy for the best flavor and texture experience.

Notes

  • Handle phyllo pastry carefully as it is delicate and dries out quickly. You can cover the sheets with a damp kitchen towel while assembling to keep them pliable.
  • For a spicier drizzle, increase the chili quantity or use fresh hot chilies instead of chili flakes.
  • These rolls are best enjoyed fresh but can be reheated briefly in the oven to restore crispiness.
  • If you prefer, try adding herbs like oregano or thyme inside the rolls with the feta for an extra layer of flavor.
  • Sesame seeds are optional but add a nice crunch and nutty note to the finished rolls.
