  • 1 bunch cilantro, washed, dried and leaves picked (about 2 cups packed cilantro leaves or 30 grams)
  • 1 green onion, cut into 1” pieces
  • 1 small clove garlic
  • 2 tablespoons fresh lime juice, more as needed
  • 1 tablespoon olive oil
  • ½ teaspoon coarse kosher salt, more as needed
  • ½ jalapeño pepper, seeded (optional)
  • ½ cup plain Greek yogurt
  • ¼ cup mayonnaise or sour cream
  • pinch of sugar (optional)

Instructions

  1. Blend Ingredients: In a blender or food processor, combine cilantro leaves, green onion, garlic, lime juice, olive oil, kosher salt, jalapeño pepper (if using), Greek yogurt, mayonnaise or sour cream, and a pinch of sugar. Blend until smooth and creamy.
  2. Adjust Seasoning: Taste the sauce and adjust the seasoning by adding more salt and lime juice as needed to achieve a balanced flavor and bright zestiness.

Notes

  • For a spicier sauce, keep the jalapeño seeds or add more jalapeño.
  • Use Greek yogurt for a thicker and tangier sauce; sour cream or mayonnaise will give a richer texture.
  • This sauce can be stored in the refrigerator for up to 3 days in an airtight container.
  • Add more lime juice for extra brightness or more olive oil for a silkier texture.
