Instructions

  1. Preheat Oven: Set your oven to 225 degrees Fahrenheit (110 degrees Celsius) and line a baking sheet with parchment paper to prepare for baking.
  2. Whisk Egg Whites: In a clean bowl, whisk the egg whites on medium speed until they become foamy, which will take about 2 minutes.
  3. Add Cream of Tartar: Stir in the cream of tartar and continue whisking until soft peaks form to stabilize the egg whites.
  4. Add Sugar Gradually: Increase the mixer speed to high and gradually add the sugar one tablespoon at a time. Continue whisking until stiff, glossy peaks form, which takes about 8 to 10 minutes in total.
  5. Fold in Flavor and Color: Gently fold in the vanilla extract and green gel food coloring using a spatula until just combined, ensuring the mixture stays airy.
  6. Pipe the Meringue: Transfer the meringue mixture to a piping bag fitted with a large star tip. Pipe tree shapes by starting with a wide base and spiraling upward in decreasing circles to create a pointed top.
  7. Bake the Meringues: Bake the piped meringues in the preheated oven for 1 hour and 30 minutes. Do not open the oven door to prevent cracking; bake until completely dry and crisp.
  8. Cool Properly: Turn off the oven and slightly open the door. Let the meringues cool inside the oven for 30 minutes to finish drying before removing.
