Delicious and easy-to-make Caprese Skewer Bites are the perfect light evening snack featuring cherry tomatoes, fresh basil, and mini mozzarella balls drizzled with olive oil and balsamic glaze. These fresh and colorful skewers are ideal for entertaining or a quick appetizer.

Ingredients

Skewers

  • 1 pint cherry or grape tomatoes
  • 1 package mini mozzarella balls (bocconcini)
  • Fresh basil leaves (about 20 leaves)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction
  • Salt to taste
  • Black pepper to taste

Optional Add-Ins

  • Prosciutto slices for a savory touch (about 4 slices, cut into pieces)
  • Pitted olives (10 pieces)
  • Crusty bread cubes or toasted baguette pieces (1 cup)

Instructions

  1. Prepare Ingredients: Rinse the cherry tomatoes and basil leaves under cold water and pat dry. Drain the mini mozzarella balls from their liquid.
  2. Assemble Skewers: Thread one cherry tomato, one fresh basil leaf, and one mini mozzarella ball onto each skewer. Repeat layering if your skewers are long.
  3. Add Optional Ingredients: If using prosciutto, olives, or bread cubes, alternate adding these with the other ingredients on the skewer for added flavor and texture.
  4. Drizzle: Lay the completed skewers on a serving platter and drizzle evenly with 2 tablespoons of extra virgin olive oil and 1 tablespoon of balsamic glaze.
  5. Season: Lightly sprinkle salt and black pepper over the skewers to taste.
  6. Chill and Serve: Place the platter in the refrigerator for 10 to 15 minutes to chill briefly. Serve fresh and enjoy immediately.

Notes

  • Use ripe, sweet cherry tomatoes for the best flavor contrast with the mozzarella and basil.
  • For a vegetarian option, omit prosciutto and olives or use plant-based alternatives.
  • If balsamic glaze is unavailable, reduce regular balsamic vinegar by simmering until thickened.
  • Serve with crusty bread or toasted baguette slices to make it more filling.
  • Skewers can be assembled a few hours ahead and refrigerated to save time before serving.
