Delicious Buffalo Chicken Stuffed Sweet Potatoes combine tender baked sweet potatoes with a creamy, spicy buffalo chicken filling topped with melted cheddar cheese and fresh green onions. This hearty and flavorful dish is perfect for a satisfying meal with a spicy kick.

Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes
  • Olive oil (for drizzling)
  • Salt and pepper (to taste)

Buffalo Chicken Filling

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce (adjust to taste)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the sweet potatoes.
  2. Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet, drizzle with olive oil, and season lightly with salt and pepper. Bake for 40-45 minutes or until the sweet potatoes are tender when pierced with a fork.
  3. Prepare the Buffalo Chicken Filling: In a large bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, and half of the shredded cheddar cheese. Mix well until all ingredients are thoroughly incorporated. Season with salt and pepper to taste.
  4. Assemble the Stuffed Sweet Potatoes: After baking, remove the sweet potatoes from the oven and let them cool slightly. Cut each sweet potato in half lengthwise and carefully scoop out a small portion of the flesh to create space for the filling. Spoon the buffalo chicken mixture generously into each sweet potato half.
  5. Bake Again: Sprinkle the remaining shredded cheddar cheese on top of the filled sweet potatoes. Return them to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  6. Serve: Remove from the oven, garnish with chopped green onions, and serve warm for a delicious, spicy, and creamy meal.

Notes

  • You can adjust the amount of buffalo sauce depending on your spice preference.
  • Use leftover cooked chicken or rotisserie chicken to save prep time.
  • For a milder version, substitute buffalo sauce with barbecue sauce.
  • If you prefer, use pepper jack cheese instead of cheddar for extra flavor.
  • Sweet potatoes can be baked in advance and reheated before assembling.
