These Buffalo Chicken Sliders are a deliciously spicy and cheesy treat perfect for game day or a quick meal. Tender baked chicken breasts are shredded and coated in tangy buffalo sauce, then piled onto soft slider buns with sharp cheddar cheese, crisp lettuce, and drizzled with creamy ranch dressing for the ultimate flavorful bite.

Ingredients

Chicken

  • 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
  • Salt and pepper, to taste

Sauce and Toppings

  • 1 cup buffalo sauce
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup ranch dressing

Bread

  • 12 slider buns

Instructions

  1. Preheat and prepare: Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray to prevent sticking.
  2. Season and bake chicken: Season the chicken breasts with salt and pepper on both sides. Place them in the prepared dish and cover tightly with foil. Bake in the oven for 25-30 minutes or until the internal temperature reaches 165°F (74°C) indicating the chicken is fully cooked.
  3. Rest and shred chicken: Remove the chicken from the oven and let it rest for a few minutes. Then, use two forks to shred the chicken into bite-sized pieces.
  4. Mix with buffalo sauce: Transfer the shredded chicken to a bowl and pour over the buffalo sauce. Stir well to ensure the chicken is evenly coated with the sauce.
  5. Assemble sliders: Place a generous amount of the buffalo chicken mixture on the bottom half of each slider bun. Top with shredded cheddar cheese and shredded lettuce.
  6. Serve with ranch dressing: Place the top bun on each slider and arrange all sliders on a serving platter. Drizzle ranch dressing over the sliders or serve on the side for dipping.

Notes

  • You can adjust the amount of buffalo sauce to make the sliders milder or spicier.
  • Adding a slice of tomato or pickles can provide extra crunch and flavor.
  • For a healthier option, use whole wheat slider buns and low-fat cheese and dressing.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Always use a meat thermometer to ensure chicken reaches a safe internal temperature of 165°F (74°C).
