Buffalo Chicken Pinwheels are a flavorful and easy-to-make appetizer featuring flour tortillas filled with a creamy blend of buffalo chicken, cream cheese, ranch dressing, cheddar cheese, and blue cheese crumbles. Perfectly chilled and sliced into bite-sized pinwheels, they offer a spicy and tangy bite that's ideal for parties and gatherings.

Ingredients

Tortilla Base

  • 3 to 4 large flour tortillas

Filling

  • 8 ounces cream cheese, softened
  • 1/4 cup ranch dressing
  • 2 cups shredded cooked chicken
  • 1/3 cup buffalo wing sauce
  • 3/4 cup finely shredded cheddar cheese or cheese blend
  • 1/4 cup blue cheese crumbles
  • 1 tablespoon minced chives

Instructions

  1. Prepare Buffalo Chicken: In a medium mixing bowl, thoroughly coat the shredded cooked chicken with buffalo wing sauce using a spatula or spoon. Set aside to let flavors blend.
  2. Make Cream Cheese Mixture: In a separate bowl, blend the softened cream cheese with ranch dressing until the mixture is completely smooth and creamy, ensuring even texture and flavor.
  3. Spread Cream Cheese Layer: Lay each tortilla flat on a clean work surface. Evenly spread a layer of the cream cheese mixture onto each tortilla, leaving a 1/2-inch border along the edges free of filling to help with rolling.
  4. Add Buffalo Chicken and Cheese: Distribute the buffalo chicken mixture evenly over the cream cheese layer. Sprinkle shredded cheddar cheese, blue cheese crumbles, and minced chives evenly on top for added flavor and texture.
  5. Roll and Chill: Tightly roll each tortilla into a compact log. Wrap each roll securely in plastic wrap and refrigerate for at least 1 hour to allow the filling to set and flavors to meld.
  6. Slice and Serve: Unwrap the chilled rolls. Using a sharp knife, slice into 1 1/2-inch wide pinwheels. Arrange pinwheels on a serving platter and garnish with extra minced chives for a fresh touch.

Notes

  • Use warm, pliable tortillas to prevent cracking when rolling.
  • For a milder version, reduce the amount of buffalo wing sauce or substitute with barbecue sauce.
  • Pinwheels are best served chilled but can be allowed to come to room temperature briefly before serving.
  • Leftover pinwheels can be stored tightly wrapped in the refrigerator for up to 2 days.
  • Try substituting blue cheese with feta or omit it altogether if preferred.
