Buffalo Chicken Bombs are deliciously cheesy and spicy bite-sized snacks made with shredded chicken tossed in buffalo wing sauce and cream cheese, wrapped in flaky crescent roll dough, baked to golden perfection, and topped with blue cheese crumbles and scallions. Perfect as an appetizer or game day treat.

  • 3 tablespoons fresh scallions, chopped
  • 2 tablespoons melted butter for brushing

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Prepare Filling: In a large mixing bowl, combine the shredded chicken, buffalo wing sauce, softened cream cheese, and half of the shredded cheddar cheese. Mix thoroughly until the mixture is creamy, well incorporated, and evenly coated with the sauce.
  3. Prepare Dough: Unroll the crescent roll dough and separate it into individual triangles along the perforations. Use a knife to carefully cut if needed to separate.
  4. Assemble Bombs: Spoon about 2 tablespoons of the buffalo chicken mixture onto the center of each dough triangle. Fold the dough over the filling by bringing all three corners together and pinch the seams tightly to seal, shaping each into a ball or bomb to prevent any filling from leaking during baking.
  5. Prepare for Baking: Place the filled bombs seam-side down on the lined baking sheet, spacing them approximately 2 inches apart. Brush the tops with melted butter and sprinkle with the remaining cheddar cheese.
  6. Bake: Bake in the preheated oven for 25 minutes until the bombs are golden brown, the dough is fully cooked, and the cheese inside is melted and bubbly.
  7. Finish and Serve: Remove from oven and immediately top each bomb with blue cheese crumbles and chopped fresh scallions. Allow to cool for 5 minutes before serving. Serve with additional buffalo sauce, ranch dressing, or blue cheese dressing for dipping if desired.
