Ingredients

Chicken and Seasoning

Pizza

  • 1 lb pizza dough, at room temperature
  • 1/2 cup BBQ sauce (for pizza base)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded smoked gouda cheese (optional)
  • 1/4 medium red onion, very thinly sliced
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • 1 tbsp olive oil (for brushing crust)
  • Semolina flour or cornmeal (for dusting)

Instructions

  1. Season the chicken: Pat chicken dry and season generously with 1 tbsp olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper to ensure flavorful meat.
  2. Cook the chicken: Either stovetop cook the chicken over medium-high heat, searing 5-7 minutes per side, or bake at 400°F (200°C) for 20-25 minutes until the internal temperature reaches 165°F (74°C). Remove and let rest for 5 minutes to retain juices.
  3. Prepare BBQ chicken: Shred or dice the rested chicken, then toss with 1/2 cup BBQ sauce until well coated. Set aside for topping.
  4. Preheat oven and setup: Place a pizza stone or heavy-duty baking sheet on the middle rack of your oven and preheat the oven to its highest setting (475-500°F / 245-260°C) for 30-60 minutes to ensure a crisp crust.
